Vegetable Pizza

As fast as takeout (and a whole lot less expensive!) - this hearty pizza is a snap to whip up with just four ingredients!





1 plain Italian flatbread crust or pizza crust, 14 oz. 
1 cup store bought tomato sauce or Basic Red Tomato Sauce (see recipe below)
1 cup bit size (3/4") pieces red, yellow and green peppers, about 1/4 of each pepper
1 cup shredded Cheddar or mozzarella cheese, 4 oz.



  • Preheat oven to 375 F. Lightly grease large baking sheet. Place crust on baking sheet. Spread evenly with tomato sauce. Top with peppers. Sprinkle with cheese. 
  • Bake 15-20 minutes or until heated and cheese is melted. Cut into wedges and serve. 
Basic Red Tomato Sauce
In large pot, combine 1 can (28 oz.) diced tomatoes, 1 can (6 oz.) tomato paste, 2 large onions (chopped), 2 cloves garlic (chopped) and 3/4 cup water. Bring to boil on medium-high heat. Reduce heat to medium-low; cook, uncovered, stirring often, until thickened, about 1 hour. Add additional water if too thick. Season with salt and pepper to taste. Cool before storing in small containers. Refrigerate for 2 days or freeze for longer storage. Makes 5 cups.
